On March 13th, Gray Mackenzie Retail Academy – Spinneys Head Office in Dbayeh, hosted the first module of a 3-day U.S. Beef Technical Training Program organized by the U.S. Meat Export Federation (USMEF) and its representative Agri Marketing. The theoretical class spanned over four hours of enlightening knowledge about the U.S. beef industry, comprehensive presentations, captivating videos, beef trivia, and a proud moment of certificate hand-over. 30 passionate butchers from 15 Spinneys stores and 8 sales executives from Mackenzie Distribution Company have eagerly participated. USMEF representative and educators “The Butcher & The Chef” shared science-based information, supplemented with educational kits and were fully dedicated to providing best learning environment and outcomes for all of the participants.
After the theoretical session that took place, a Practical Butchering and demos in the kitchen for two groups of butchers and sales staff took place at the Signature Store-Downtown. Six U.S. Beef cuts were presented: Brisket, Chuck Roll, Short Ribs, Prime Rib, Striploin, and Tenderloin.
Following both the theoretical and practical sessions, a Ramadan Iftar for participants and Gray Mackenzie management took place at the Signature Store – Downtown. A variety of U.S. beef cuts were prepared in various culinary applications to present the versatility of U.S. beef and the matching cooking method for each type of cut.
