Ingredients:
2 cups Pumpkin
500 g. U.S. Beef Chuck Roll
2 Eggplants, cubed or discs
2 cups mashed tomatoes
1 cup of Fresh Cream
Pinch of black pepper
Pinch of salt
2 tbsps. vegetable oil
1 cup potato, cubed
5 mushrooms
Preparation:
Peel the pumpkin and cut into cubes and put aside.
Cut U.S. beef chuck roll into cubes and place aside.
Put a pot on the stove, add vegetable oil, cubes of U.S. beef chuck roll, pumpkin and the rest of the ingredients. Stir and cook until fork tender.
Add mashed tomatoes and fresh cream with a pinch of salt and pepper. Simmer until done. Pour into platter and serve.
