Ingredients:
2 eggplants
2 zucchinis
2 carrots
1 red pepper
¼ cup thyme
2 tbsp. Asian mustard
Pinch of salt
Pinch of spices
2 potatoes
1 onion
2 garlic
3 tbsps. olive oil
500 g U.S. beef chuck roll
Preparation:
Cut U.S. beef chuck roll into cubes. Put in an oven pan with chopped vegetables on top. Drizzle with some olive oil.
Season with Asian mustard, wild thyme, salt and spices. Place in the oven at 200°C for one hour or until ingredients are done.
Take out from oven and serve hot.
