U.S. Beef Tenderloin Fateh with Coriander and Garlic

Ingredients:

·      500g. U.S. beef tenderloin

·      3 cloves garlic

·      1 bunch green coriander

·      Pinch of olive oil

·      1 tbsp ghee

·      pinch of salt

·      2 tbsps. lemon juice

·      6 tbsps. yogurt

·      1 cup tahini

·      1 tsp. cumin

·      2 tbsp fried pita bread

·      A pinch of boiled chickpeas

·      For garnish Pomegranate seeds

·      For garnish almonds

·      For garnish pistachios

·      For garnish bread rolls 

Preparation:

Place U.S. beef tenderloin cut into long strips on the grill. In a bowl combine yogurt, tahini, lemon juice, half a clove of garlic, salt and cumin. Fry the pistachios and almonds with ghee in a pan. In another pan sauté the garlic and coriander in olive oil.

In the serving bowl put the fried bread, the boiled chickpeas, the yogurt and tahini sauce, and the beef strips. Garnish with, pomegranate, the garlic and coriander, the fried almonds and pistachios and bread rolls.
