Ingredients:
· 1 tbsp butter
· 1 tbsp vegetable oil
· 1 onion
· 1 cup vermicelli
· 1/4 tsp cumin
· 1/4 tsp cinnamon
· 1/4 tsp seven spices
· 1 tbsp tomato paste
· 3 cups Freekeh (green roasted wheat)
· 1 cup boiled chickpeas
· 1/24 cup beef broth
· 1 tbsp ghee
· 1 kg. U.S. Beef Striploin
· 1/2 cup almonds
· Cherry tomatoes for garnish
Sauce:
· 3 tbsp. butter
· 3 tbsp. floor
· ¼ tsp. cumin
· ¼ tsp. seven spices
· 1 cup beef stock
Preparation:
Melt the butter with vegetable oil in a pot over medium heat. Add chopped onion and the vermicelli, and cook until change color. Season with cumin, cinnamon, seven spices, and tomato paste. Add the Freekeh and chickpeas with continuous stirring. Add meat broth, and bring to a boil. Cook until the freekeh is tender and add the ghee.
Cut the U.S. Beef Striploin into strips and grill in a pan.
For the sauce, melt the butter, then add flour, cumin, seven spices, and meat broth with constant stirring and bring to a boil.
Serve freekeh with U.S. Beef Striploin and sauce and garnish with cherry tomatoes and almonds.
