U.S. Beef Chuck Roll and Burghul Stuffed Eggplants

Ingredients:


·      1/2cup U.S. Beef Chuck Roll, coarsely minced  

·      1/21 coarse brown burghul

·      1 onion

·      3 garlic cloves

·       2 tomatoes

·      1 cup parsley

·      1/4 cup mint

·      3 tbsp pomegranate molasses

·      3 tbsp lemon juice

·      1 red bell pepper

·      1/4 cup olive oil

·      pinch of salt

·      pinch of black pepper

·      1kg. thin eggplant

·      2cups mashed tomatoes

Preparation:

In a bowl combine U.S. Beef Chuck Roll coarsely minced, burghul, onion, garlic, tomato, parsley, mint, pomegranate molasses, lemon juice, red bell pepper, olive oil, salt, and black pepper.

Cut the eggplant into two parts and empty what is inside. Stuff it with the filling and place it in a tray.

Add tomato slices, onions, and mashed tomatoes with salt, black pepper, olive oil, and pomegranate molasses.

Put in the oven at 180⁰C until cooked. Garnish with parsley and pomegranate molasses.
