Grilled Rib Eye & Hanging Tender with roasted “Freekeh” (wheat) & Wild Herbs

Ingredients:


• 400 g. Hanging Tender  

• 600 g. Rib Eye  

• 80 g. Olive Oil  

• 600 g. Cooked “Freekeh” (roasted wheat)  

• 8 g. Lemon Zest  

• 8 g. Crispy Onion  

• 8 Pieces Roasted Radish  

• 12 Pieces Herbs for Garnish  

• Salt to taste

• Pepper to taste  

• 100 g. Beef Juice

Preparation:


1. Start by cleaning and cutting the meat pieces. 

2. Add Himalayan and smoked maldon salt, madagascar pepper, olive oil and Thyme before grilling.

3. Cut the onions and pan-fry them with a bit of olive oil, basil and mint. Add the pre-boiled “freekeh” and lemon zest.

4. Flip the meat pieces once and make sure to cook from all sides. Remove from the grill and let it rest.

5. Cut the radishes into 2 and grill. Cut the green apples into sticks.

6. Mark the meat on the grill before directly serving. Cut the meat against the grain.

7. Place on the plate with cooked wheat and green apples sticks, add some beef broth and decorate with Cress flower, purslane, radish and crispy onions.
