Ingredients:
• 1 Kg. U.S. Chuck Roll
• Pinch of black pepper
• Pinch of salt
• ½ Cup vegetable oil
For caramelized onions
• 2 Onions
• ½ Cup brown sugar
• ½ Cup beef broth
For artichoke’s filling
• 1 Onion
• 1 Clove garlic
• 2 Tbsp. olive oil
• 1 Carrot
• 1 Zucchini
• 6 Artichokes
For sauce
• 1 Cup cooking cream
• Pinch of salt
• Pinch of black pepper
• 1 Cup fresh mushrooms
• ¼ Cup "mozzarella" cheese
• 2 Tsp. wild thyme
Preparation:
1. Grind Chuck Roll finely. Season with salt and pepper; rub well and shape into a roll. Roast roll.
2. Boil artichokes.
3. Dice vegetables finely and fry in olive oil. Stuff artichokes with vegetables’ mixture.
4. Wedge onions; fry in vegetable oil until onions soften. Add brown sugar. Stir well; add beef broth to obtain caramelized onions.
5. Heat cooking cream and a clove of garlic in a cooking pot. Bring to a boil; add fresh mushrooms. Season sauce with salt, black pepper and wild thyme.
6. Serve roasted roll with sauce and stuffed artichokes.
